Cauliflower fritters, another way to eat caulflower!

Do you know how to prepare some delicious cauliflower fritters?
This dish is great to make children eat this vegetable, as they don't usually like its strong
funny smell. But, if you prepare some fritters like these ones, crunchy outside and soft and tasty inside, I am sure they will love them!!!

Ingredients & preparation for 4 people:
a small cauliflower
1-2 eggs
breadcrumb
grated caciocavallo cheese
salt & black pepper
a pinch of nutmeg or turmeric (optional)
e.v. olive oil


It's always difficult in recipes like this, specify the exact quantity for the ingredients. I usually wash the cauliflower and boil it first in salted water. As soon as it is cooked let it drain on a colander so that it gets rid of all the water that contains. Then, in a bowl place our vegetable and mix it with an egg and 3 table spoons of breadcrumb and 3 of grated cheese (if you don't have caciocavallo choose another you like). 

If the mixture is still too soft add more breadcrumb and cheese, if it's too hard add a second egg. A pinch of black pepper to finish with, and nutmeg or turmeric if you like it too. That's it... we are ready to fry!

On a large pan, pour some e.v. olive oil on a high heat, when the oil is hot take a spoon full of the mixture and with the help of a fork or a second spoon slowly place it on the pan. Do the same for the rest of the mix until the pan is full.

Careful because they cook quite quickly. Once they are ready on one side (few minutes) turn them on the other side and when they are golden brown take them out of the pan and place them on kitchen paper for a little while to absorb the exceeding oil, then on a serving plate. They must be served and eaten while still hot!

This is a lovely side-dish that will turn a boring veg in such an excitig recipe! :P

Cauliflower pie, another way to eat cauliflower!

Do you know how to cook a tasty cauliflower pie? In Sicilian cuisine we use a lot this vegetable. We like to put it especially on pasta, we even have three different kinds, but in my family we also prepare it in a very simple way for dinner.

Ingredients and preparation: 1 cauliflower (medium size) - 2 eggs - breadcrumbs - 100 gr. grated caciocavallo cheese - salt - black pepper - 60 gr. salami (the original recipe is without but sometimes we add it)

1. Cut the cauliflower in pieces removing the hardest part and soak it in water with half a teaspoon of baking soda that will help cleaning it well and eliminating possible bugs. After 10 or 15 minutes wash it under running water and put the pieces in a colander.
2. In the meantime put a casserole with water on a medium heat, when it starts boiling add salt and toss the cauliflower in the pot. As soon as the vegetable is cooked (must be soft) drain it and let it cool for some minute.

3. Preheat the oven at 180° C.
4. Take a large bowl and put almost all the ingredients together: cauliflower, eggs, cheese, salami if liked (cut in pieces) and some black pepper. 
5.When the mixture looks creamy and well mixed, place it on a pie dish or a baking tray for the oven.
6. You can either spread it quite thin or thicker if you prefer. Sprinkle on top some breadcrumbs with small knobs of butter to make the top a bit crispy.
7. When the oven has reached the right temperature cook the pie for about 20 minutes, until it becomes kind of golden brown.
8. Place it on a serving dish and enjoy when it's still hot! Very nice if you accompany it with a tomato salads dish.


It's really good and if you leave out the salami (which is optional) you have a great dish for vegeterians too. So enjoy!

Cauliflower with black olives cooked in red wine

Do you know how to cook cauliflower in red wine? This side dish smells really good and it is so easy to prepare. For 4 people you will need: half of a big cauliflower - 50 gr black olives - 3 glasses red wine - olive oil - salt - a clove of garlic


Cut the cauliflower into pieces and wash it under running water. Put a large frying pan on a medium heat with a drizzle of olive oil and a clove of garlic. When the garlic becomes lightly golden put the cauliflower inside the pan, reduce the heat on minimum and cover with a lit. 


After 10 minutes pour the first glass of red wine and the salt and let it cook again with the lit. Do the same after 10-15 minutes with the two other glasses of wine, mixing with a fork and preventing cauliflower from sticking to the pan. Then add the black olives and cover once again with the lit.


Cooking time all together must be at least one hour, depending on how you prefer the cauliflower, if very soft or crispier. For the last 5 minutes sautè the cauliflower on a higher heat and transfer rapidly on a plate. Serve still hot. It will be the most wine-scented dish you have ever tried. Perfect with fish, meat or even a nice tasty cheese. Enjoy!
